Laurie's Burrito Lunch

Shirley asked me for my favorite lunch recipe. I'm delighted to share my burrito recipe.

Laurie's Go-To Lunch
Fantastic Foods Refried Beans Mix, divided into thirds. (Put two of those thirds in ziploks for later use.)
Use one of those thirds to make two servings. Put the dry mix in a bowl, just cover with boiling water. Stir. Cover. Wait five minutes.
Heat the tortilla (whatever points value tortilla you use will determine your final POINTS tally.) Then put the filling with some salsa on top. (I use Private Selection QFC Cilantro Salsa, lowest sugar content), roll it up, heat it up, eat it up!
Let me know if you try it. I don't like BEANS per se, but this is more like hummus, all mooshed up! VERY filling. I eat it with cherry tomatoes and sliced cucumbers.
You can also leave it in a toaster oven on 225*, wrapped in parchment paper for a long time- while you are busy with other things. Hot lunch when you are ready.

For those that keep kosher: Fantastic Foods no longer has supervision on the refried beans mix. I am still trying out homemade recipes. If you have a spicy pinto bean recipe, send it my way.
